From old traditions, comes a rare and unique product – Birch Syrup! Pure & naturally gluten free, vegan, naturally low in sugar. Sustainably harvested near the shores of Lake Winnipeg, from a forest intermixed with wild plums, high bush cranberries, chokecherries and wild raspberries, that form a symbiotic relationship to the trees and add to the flavour profile!

While Birch Syrup is extracted and produced much like Maple Syrup, and is extremely high in nutrients and antioxidants, that’s where the similarities end! It takes 150 litres of birch sap to make one litre of syrup (maple is a 40:1 ratio), the resulting syrup has about half the sugar content of maple. If you keep it refrigerated, it will last a very long time (unless you enjoy it a lot); a little goes a long way!

Due to its flavour complexity, it makes a great compliment to meat (especially wild game), fish, veggies, fruit…excellent as a dressing/topping, baking ingredient, and even better as a marinade! Birch is a culinary syrup valued for lending flavour dimension to whole foods, recipes and cocktails, it pairs especially well with pork, bison, venison, lamb, ham, cheese, brussel sprouts, peppers, mushrooms, apples, raisins, dates, ginger, coriander and smoked paprika.

Amber Birch Syrup (100 ml) – a deep red colour, with a robust fruitiness and a tart, citrus note. Equally great with a salad or a steak.

Dark Birch Syrup (100 ml)  – rich deep brown in colour, smooth, balsamic and earthy. Bold notes of fig, molasses, and balsamic reduction, it tenderizes red meats & game and adds tangy flavour to BBQ sauces, marinades & smoker recipes. Slightly less tart than the Amber.

Ingredients:  100% pure Canadian birch syrup, made with organic birch tree sap.

Shelf life: no expiry, refrigerate after opening.
